Cereals

10.1 Introduction

Cereals

  are the starchy edible grains (seeds) of cultivated grasses
  include maize (corn), wheat, oats, barley, rice and rye
  are a rich source of starch
  may be refined or unrefined
Prior to milling an intact grain consists of
  the bran (outer layer)
  the endosperm (the starchy middle layer)
  the germ (which is at the heart of the grain).
