10.2 Wholegrain and refined cereals

Whole-grain cereals are cereals that contain a significant proportion of the whole grain (in other words the bran, germ and endosperm).
White flour, polished rice and other refined grains have had the bran and germ components of the grain removed leaving the endosperm.

Nutrients are added back to refined cereal foods such as thiamin, riboflavin, niacin and iron, the potential health promoting properties of many phytochemicals is lost.
