12.3 Fermented dairy foods

Dairy foods are often fermented, a process that can produce bacteria that are potentially beneficial to the human health.

Researchers who studied the effect of drinking fermented milk in children attending child care centres found that children who drank fermented milk everyday had fewer ear infections, coughs, colds and other respiratory problems such as bronchitis than children who didn't consume drink this type of milk.
