Fermented Foods (probiotics)

17.1 Introduction

Humans have been fermenting foods for centuries. The major advantage is earlier times was to preserve foods and make them safe to eat.
In recent years, some fermented foods have been called pro-biotics.
Pro-biotics are foods or supplements that contain live micro-organisms (bacteria) thought to benefit our health by potentially improving the balance of beneficial bacteria in the bowel.
