5.2 Domesticated and non-domesticated animals

Non-domesticated animals like rabbit and kangaroo are very lean meats. These animals have a much higher concentration of polyunsaturated fats compared with domesticated animals.

Domesticated animals that are free to graze the land are
~ leaner and have less saturated fat than grain fed animals and
~ accumulate fat as a selvedge that can be easily trimmed off the meat.
The meat from grain fed cattle
~ tends to be marbled (i.e. the fat is distributed throughout the muscle).
