Legumes

9.1 Introduction

Legumes are the edible seeds of the bean and pea family - plant with pods.
Legumes are inexpensive.

Legumes can grow almost anywhere and feature in many traditional cuisines.


9.2 Legumes and nutrition

Legumes are a very good source of
~ protein
~ slowly digested starch
~ dietary fibre (especially soluble fibre)
Legumes are a good source of
~ the vitamins thiamin and niacin,
~ the minerals iron, zinc, calcium, phosphorus and magnesium
Most legumes contain very little fat
~ soybeans are the exception
~ soybeans are about 20% fat
~ most of the fat in soy is polyunsaturated fat
