PREFACE
Nutrition
research has now progressed to the point where much is known
about food and nutrient needs. The information currently available
to us is sufficient to allow us to make informed judgements
about the adequacy of our diet and the implications for our
health of how we eat. Information alone is not enough to enable
good decisions to be made about food choice. This book provides
not only the information you require, but tells you how to apply
this information for your own nutritional needs and concerns.
Most of the nutrient values used in the compilation of the charts
in this book come from British and Australian sources, including
results from the laboratories in the Department of Human Nutrition
at Deakin University. While there are differences in the nutrient
content of the same foods from different countries, these are
not significant and the values are generally applicable.
